Any business owner who has formed an LLC in New York can attest to at least two truths about the "city that never sleeps": good pizza and good bagels. The history of New York pizza is extensive, controversial and beyond the understanding of most laymen, but experts in the field of the Big Apple's other staple, bagels, assert that it is the result of the unique and recognizable taste of the city's water.
A team of Florida entrepreneurs, spellbound by the allure of the city's bagels, spent months trying to perfect a water filtration system to perfectly match that of New York's. The result is the Original Brooklyn Water Bagel Company.
"There are certain things within New York City water that affect baking," said Ira Marcus, an executive at the Original Brooklyn Water Bagel Co. "We identified the key ingredients … through trial and error."
Apparently, New York bagel fans in the Sunshine State are a dime-a-dozen and, moreover, are ardently passionate about their baked goods - so much that a spin-off company, the Famous New York Baking Water Corp, which uses similar filtration technology, has prompted a lawsuit over misappropriations of trade secrets.
But the defendant contends the technology is not complicated enough to be patent-worthy.
Either way, both business owners maintain that, with the filtration technology, their bagels are even better than New York's.
